Our gas cooktop needed to be worked on last year, so I bought a cheapo General Electric, dual burner hot plate at Walmart for 20-something dollars, and it is now a treasured kitchen appliance. The temperature controls are infinitely variable from room temperature to full blast, and it is perfect for making stock. I bring the pot to a boil and then dial it down, checking it frequently over the course of an hour or so, until it stabilizes at a very low simmer. I can put a pot of stock on in the afternoon, and it'll be at the same simmer the next morning. Glass top lids are helpful in that you can check what's going on in the pot without losing any heat.
